DIAL-IN DINNER #4:
SWEET POTATO LOVES TOFU BY KIHWA LIM (EUGENE’S MOM)

Date: 06 March, 2021

Main ingredients: Basil, Carrot, Chilly, Lemon, Sweet potato, Tofu & Turnip

 Ingredients 

● 1 tofu (for frying) 

● 1 turnip/radish/무 

● 1 sweet potato 

● ½ carrot 

● Olive oil  

● Starch/녹말 가루(*important) 

● Slice of lemon, basil (for garnish) 

How to make sweet potato love tofu 

1. Steam sweet potato(1) first and put the carrot (½) later on.  Steam well until you can poke your chopstick. 

2. Meanwhile, waiting for the sweet potato and carrot to steam,   julienne(채썰기) the turnip/radish. Put vegetable oil on the pan   and fry and stir the turnip, adding salt and pepper. After   finishing frying it, put it on the dish in any shape you want.  

3. When sweet potato and carrot are soft, put them into the   blender with four tablespoons of water(you can use milk if   you want). Blend it until it becomes like a puree. 

4. Prepare starch powder and slice one tofu in half. Let the   starch soak in tofu. Then fry starched tofu with vegetable oil,   adding salt and pepper. Place the fried tofu on top of the   fried turnip/radish. 

5. Finally, use a spoon to scoop the potato&carrot puree and   put it on top of the tofu. Also, use a slice of lemon and basil   as decoration.
